Terroir
This cuvée is elaborated from our best plot of Roussanne on a gray flint limestone soil

Harvest
After waiting for the optimum ripeness, the grapes were harvested manually on September the 8th 2021.

Vinification
The grapes are picked by hand, early in the morning to keep fresh, sorted and packed in a way to limit the crushing. The bunches are pressed gently in a pneumatic press. The musts are selected, then sent to the stainless steel tank. After settling in the cold, the Rousssanne are filled in barrels to carry out the alcoholic fermentation. There is no malo-lactic fermentation.

Aging
100% of the volume is aged during 9 months in new oak and 1 year old barrels.

Tasting
Pale gold crystal dress with green highlights. The very powerful nose reveals notes of white peach and orange blossom. On the palate, the attack is ample, supported by an acidity which give it a good length. To be drunk for more than 20 years, at 12 ° C.
