This cuvée is elaborated from our best plot of clairette on a gray limestone with flint soil
Harvest
After waiting for the optimum ripeness, the grapes were harvested manually on September 2019.
Vinification
The grapes are picked by hand, early in the morning to keep fresh, sorted and packed in a way to limit the crushing. The bunches are pressed gently in a pneumatic press. The musts are selected, then sent to the stainless-steel tank. After settling in the cold, the clairette are filled in barrels to carry out the alcoholic fermentation. There is no malo-lactic fermentation.
Aging
100% of the volume is aged during 11 months in new oak barrels.
Tasting
Pale gold color with green highlights. Elegant notes of lemon and white flower on the nose. The palate has a nice minerality and length.
